Ingredients

  • Orange bell pepper - 2 medium, diced
  • Chickpeas (canned) - 240 grams, drained and rinsed
  • Red onion - 1 medium, thinly sliced
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 200 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a tajine or a large skillet over medium heat.
  2. Add sliced red onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add diced orange bell pepper to the skillet and cook for 5 minutes, stirring occasionally.
  5. Mix in the drained chickpeas, cumin, cinnamon, paprika, salt, and black pepper.
  6. Pour in the vegetable broth and bring the mixture to a simmer.
  7. Cover the tajine or skillet and let it cook for 15 minutes, stirring occasionally.
  8. Remove from heat and stir in fresh parsley and lemon juice before serving.
