  • Cilantro - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a tajine or large pot over medium heat.
  2. Add the diced red onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
  3. Stir in the chopped orange bell peppers, sliced carrots, and diced zucchini, cooking for another 5 minutes until they begin to soften.
