Ingredients

  • Carrot - 1 medium, sliced
  • Red onion - 1 large, chopped
  • Garlic - 2 cloves, minced
  • Canned chickpeas - 200 grams, drained and rinsed
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Heat the olive oil in a large tajine or heavy-bottomed pot over medium heat.
  2. Add the chopped red onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, and cook for another minute until fragrant.
  4. Add the sliced orange bell pepper, diced zucchini, and sliced carrot, cooking for about 5-7 minutes until they start to soften.
  5. Sprinkle in the cumin, cinnamon, turmeric, paprika, salt, and black pepper, stirring well to coat the vegetables in the spices.
  6. Add the drained chickpeas and pour in the vegetable broth, bringing the mixture to a gentle simmer.
  7. Cover the tajine or pot, reduce the heat to low, and let it cook for 15-20 minutes, stirring occasionally, until the vegetables are tender and flavors meld together.
  8. Remove from heat and garnish with fresh chopped cilantro before serving.
