- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 300 ml
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- Heat the olive oil in a large tajine or heavy-bottomed pot over medium heat.
- Add the chopped red onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, and cook for another minute until fragrant.
- Add the sliced orange bell pepper, diced zucchini, and sliced carrot, cooking for about 5-7 minutes until they start to soften.
- Sprinkle in the cumin, cinnamon, turmeric, paprika, salt, and black pepper, stirring well to coat the vegetables in the spices.
- Add the drained chickpeas and pour in the vegetable broth, bringing the mixture to a gentle simmer.
- Cover the tajine or pot, reduce the heat to low, and let it cook for 15-20 minutes, stirring occasionally, until the vegetables are tender and flavors meld together.
- Remove from heat and garnish with fresh chopped cilantro before serving.
