  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Fresh cilantro - a handful, chopped

Steps

  1. Preheat your tajine or a heavy-bottomed pot on medium heat.
  2. Dice the eggplant, zucchini, red bell pepper, and carrot into bite-sized pieces.
  3. Chop the onion and garlic finely.
  4. Add the olive oil to the tajine and sauté the onion and garlic until they are translucent.
