- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon

- Olive oil - 2 tablespoons
- Vegetable broth - 300 ml
- Fresh cilantro - a handful, chopped

Steps
- Preheat your tajine or a heavy-bottomed pot on medium heat.
- Dice the eggplant, zucchini, red bell pepper, and carrot into bite-sized pieces.
- Chop the onion and garlic finely.
- Add the olive oil to the tajine and sauté the onion and garlic until they are translucent.
