  • Couscous - 100 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Yellow bell pepper - 1, diced
  • Zucchini - 1, diced
  • Carrot - 1, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Vegetable broth - 250 milliliters
  • Chickpeas - 200 grams, canned and drained
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
  2. Add the diced red and yellow bell peppers, zucchini, and carrot to the skillet. Stir and cook for an additional 5 minutes until the vegetables begin to soften.
  3. Stir in the cumin, coriander, smoked paprika, black pepper, and salt. Cook for another minute to let the spices bloom.
  4. Pour in the vegetable broth and bring the mixture to a simmer. Once simmering, add the drained chickpeas and reduce the heat to low. Cover and let it cook for 15 minutes.
  5. While the vegetables are cooking, prepare the couscous according to package instructions, usually by combining with boiling water and letting it sit covered for about 5 minutes.
  6. After 15 minutes, remove the lid from the vegetable mix and check for seasoning. Adjust salt if necessary, then stir in the lemon juice and chopped parsley.
  7. Serve the vegetable mixture over a bed of couscous, garnishing with additional parsley if desired.
