- Red bell pepper - 1, diced
- Yellow bell pepper - 1, diced
- Zucchini - 1, diced
- Carrot - 1, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Vegetable broth - 250 milliliters
- Chickpeas - 200 grams, canned and drained
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
- Add the diced red and yellow bell peppers, zucchini, and carrot to the skillet. Stir and cook for an additional 5 minutes until the vegetables begin to soften.
- Stir in the cumin, coriander, smoked paprika, black pepper, and salt. Cook for another minute to let the spices bloom.
- Pour in the vegetable broth and bring the mixture to a simmer. Once simmering, add the drained chickpeas and reduce the heat to low. Cover and let it cook for 15 minutes.
- While the vegetables are cooking, prepare the couscous according to package instructions, usually by combining with boiling water and letting it sit covered for about 5 minutes.
- After 15 minutes, remove the lid from the vegetable mix and check for seasoning. Adjust salt if necessary, then stir in the lemon juice and chopped parsley.
- Serve the vegetable mixture over a bed of couscous, garnishing with additional parsley if desired.
