- Garlic - 2 cloves, minced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, sliced
- Tomato - 1 large, chopped
- Chickpeas - 200 grams, cooked (or 1 can)
- Vegetable broth - 250 ml
- Black pepper - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Fresh coriander - for garnish
Steps
- Heat the olive oil in a tajine or a pot over medium heat.
- Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Stir in the diced zucchini, bell pepper, and sliced carrot, cooking for about 5 minutes until slightly softened.
- Add the chopped tomato and cooked chickpeas to the pot, mixing well.
- Pour in the vegetable broth and add black pepper, cumin, paprika, cinnamon, and salt to taste.
- Bring the mixture to a simmer, then reduce the heat to low, covering the pot and cooking for 15-20 minutes, stirring occasionally.
- Once the vegetables are tender and the flavors melded, remove from heat.
- Serve hot, garnished with fresh coriander.
