Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Tomato - 1 large, chopped
  • Chickpeas - 200 grams, cooked (or 1 can)
  • Vegetable broth - 250 ml
  • Black pepper - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander - for garnish

Steps

  1. Heat the olive oil in a tajine or a pot over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  3. Stir in the diced zucchini, bell pepper, and sliced carrot, cooking for about 5 minutes until slightly softened.
  4. Add the chopped tomato and cooked chickpeas to the pot, mixing well.
  5. Pour in the vegetable broth and add black pepper, cumin, paprika, cinnamon, and salt to taste.
  6. Bring the mixture to a simmer, then reduce the heat to low, covering the pot and cooking for 15-20 minutes, stirring occasionally.
  7. Once the vegetables are tender and the flavors melded, remove from heat.
  8. Serve hot, garnished with fresh coriander.
