- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon

- Fresh coriander - 2 tablespoons, chopped
- Vegetable broth - 250 ml
Steps
- Heat the olive oil in a tajine or large skillet over medium heat.
- Add the diced red onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Chop the yellow bell pepper, zucchini, and carrot into bite-sized pieces and add them to the pan.
- Stir in the cumin, cinnamon, paprika, turmeric, salt, and black pepper, cooking for another 5 minutes until the vegetables begin to soften.
- Add the diced tomato and cooked chickpeas, mixing well.
- Pour in the vegetable broth, bringing the mixture to a gentle simmer.
- Cover the tajine or skillet and let it cook for 15 minutes, allowing the flavors to meld and the vegetables to become tender.
- Once cooked, remove from heat and stir in the fresh coriander before serving.
