  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - 2 tablespoons, chopped
  • Vegetable broth - 250 ml

Steps

  1. Heat the olive oil in a tajine or large skillet over medium heat.
  2. Add the diced red onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Chop the yellow bell pepper, zucchini, and carrot into bite-sized pieces and add them to the pan.
  4. Stir in the cumin, cinnamon, paprika, turmeric, salt, and black pepper, cooking for another 5 minutes until the vegetables begin to soften.
  5. Add the diced tomato and cooked chickpeas, mixing well.
  6. Pour in the vegetable broth, bringing the mixture to a gentle simmer.
  7. Cover the tajine or skillet and let it cook for 15 minutes, allowing the flavors to meld and the vegetables to become tender.
  8. Once cooked, remove from heat and stir in the fresh coriander before serving.
