  • Chickpeas - 240 grams, canned, drained and rinsed
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 milliliters
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a tajine or a large skillet over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the diced bell peppers and cook for another 5-7 minutes until they begin to soften.
  4. Add the cumin, paprika, cinnamon, salt, and black pepper, stirring well to coat the vegetables.
  5. Add the chickpeas and vegetable broth, bringing the mixture to a gentle simmer.
  6. Cover and let it cook for 15-20 minutes, stirring occasionally, until the peppers are tender and the flavors meld.
  7. Remove from heat and stir in the fresh parsley before serving.
