- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 milliliters
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a tajine or a large skillet over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the diced bell peppers and cook for another 5-7 minutes until they begin to soften.
- Add the cumin, paprika, cinnamon, salt, and black pepper, stirring well to coat the vegetables.
- Add the chickpeas and vegetable broth, bringing the mixture to a gentle simmer.
- Cover and let it cook for 15-20 minutes, stirring occasionally, until the peppers are tender and the flavors meld.
- Remove from heat and stir in the fresh parsley before serving.
