- Dark blue peppers - 2 medium
- Zucchini - 1 medium, diced
- Carrot - 1 medium, sliced
- Red onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Chickpeas - 100 grams, cooked
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Cut the dark blue peppers in half, remove the seeds, and place them on a baking tray. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and roast for 20 minutes.
- In a large pot or tajine, heat the remaining tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the diced zucchini and sliced carrot to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in cumin, cinnamon, and paprika, and cook for an additional minute until fragrant.
- Pour in the vegetable broth and add the cooked chickpeas. Bring the mixture to a simmer and cover. Let it cook for 15 minutes, allowing the flavors to meld.
- Once the peppers are roasted, chop them into smaller pieces and add them to the pot. Stir well and adjust seasoning with salt and pepper.
- Garnish with chopped cilantro before serving.
