Ingredients

  • Dark blue peppers - 2 medium
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Red onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Chickpeas - 100 grams, cooked
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the dark blue peppers in half, remove the seeds, and place them on a baking tray. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and roast for 20 minutes.
  3. In a large pot or tajine, heat the remaining tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  4. Add the diced zucchini and sliced carrot to the pot. Cook for another 5 minutes, stirring occasionally.
  5. Stir in cumin, cinnamon, and paprika, and cook for an additional minute until fragrant.
  6. Pour in the vegetable broth and add the cooked chickpeas. Bring the mixture to a simmer and cover. Let it cook for 15 minutes, allowing the flavors to meld.
  7. Once the peppers are roasted, chop them into smaller pieces and add them to the pot. Stir well and adjust seasoning with salt and pepper.
  8. Garnish with chopped cilantro before serving.
