  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Chickpeas - 200 grams, cooked
  • Red onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 ml
  • Fresh coriander - 1/4 cup, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or a large skillet over medium heat.
  2. Add the chopped red onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the sliced blue bell peppers, zucchini, and carrot, cooking for about 5 minutes until slightly softened.
  4. Add the cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper, mixing well.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Cover the tajine and let it cook for about 20 minutes, stirring occasionally, until the vegetables are tender.
  7. Remove from heat and stir in the fresh coriander and lemon juice just before serving.
