- Carrots - 2 medium, sliced
- Zucchini - 1 medium, diced
- Chickpeas - 200 grams, cooked
- Canned tomatoes - 400 grams, crushed
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - a handful, chopped
- Vegetable broth - 250 ml
Steps
- In a large tajine or heavy pot, heat the olive oil over medium heat.
- Add the diced red onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the sliced carrots and diced zucchini, and cook for 5 minutes, stirring occasionally.
- Add the white bell peppers, cooked chickpeas, crushed tomatoes, cumin, paprika, cinnamon, coriander, salt, and black pepper.
- Pour in the vegetable broth and stir well to combine all ingredients.
- Cover the tajine and let it simmer on low heat for about 25 minutes until the vegetables are tender and the flavors meld.
- Once cooked, remove from heat and stir in the chopped fresh parsley.
- Serve warm with crusty bread or over couscous.
