  • White bell peppers - 2 medium
  • Red onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrots - 2 medium, sliced
  • Zucchini - 1 medium, diced
  • Chickpeas - 200 grams, cooked
  • Canned tomatoes - 400 grams, crushed
  • Olive oil - 3 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - a handful, chopped
  • Vegetable broth - 250 ml

Steps

  1. In a large tajine or heavy pot, heat the olive oil over medium heat.
  2. Add the diced red onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the sliced carrots and diced zucchini, and cook for 5 minutes, stirring occasionally.
  5. Add the white bell peppers, cooked chickpeas, crushed tomatoes, cumin, paprika, cinnamon, coriander, salt, and black pepper.
  6. Pour in the vegetable broth and stir well to combine all ingredients.
  7. Cover the tajine and let it simmer on low heat for about 25 minutes until the vegetables are tender and the flavors meld.
  8. Once cooked, remove from heat and stir in the chopped fresh parsley.
  9. Serve warm with crusty bread or over couscous.
