  • Zucchini - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Red onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Chickpeas - 200 grams, cooked
  • Tomato - 1 medium, diced
  • Cilantro - 1/4 cup, chopped
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped red onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the sliced white bell peppers, zucchini, and carrot. Cook for an additional 5 minutes, stirring occasionally.
  4. Add the diced tomato, cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Mix well to combine.
  5. Pour in the vegetable broth and bring to a simmer. Cover the tajine and let it cook for 25 minutes, stirring occasionally, until the vegetables are tender.
  6. Once cooked, remove from heat and stir in the fresh cilantro and lemon juice.
  7. Serve warm with crusty bread or over a bed of couscous.
