Ingredients

  • White bell peppers - 2 large
  • Chickpeas - 200 grams, cooked
  • Zucchini - 1 medium, chopped
  • Carrot - 1 medium, sliced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the tops off the white bell peppers and remove the seeds. Place them in a baking dish.
  3. In a pan, heat olive oil over medium heat. Add diced onion and garlic and sauté until translucent, about 5 minutes.
  4. Add sliced carrot and chopped zucchini to the pan and cook for another 5 minutes.
  5. Stir in the cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Mix well and cook for an additional 5 minutes.
  6. Pour in the vegetable broth and let the mixture simmer for 10 minutes until slightly thickened.
  7. Fill the prepared white bell peppers with the chickpea and vegetable mixture.
  8. Cover the baking dish with aluminum foil and roast in the preheated oven for 20 minutes.
  9. Remove from the oven, sprinkle with fresh parsley, and serve warm.
