- White bell peppers - 2 large
- Chickpeas - 200 grams, cooked
- Zucchini - 1 medium, chopped
- Carrot - 1 medium, sliced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Cut the tops off the white bell peppers and remove the seeds. Place them in a baking dish.
- In a pan, heat olive oil over medium heat. Add diced onion and garlic and sauté until translucent, about 5 minutes.
- Add sliced carrot and chopped zucchini to the pan and cook for another 5 minutes.
- Stir in the cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Mix well and cook for an additional 5 minutes.
- Pour in the vegetable broth and let the mixture simmer for 10 minutes until slightly thickened.
- Fill the prepared white bell peppers with the chickpea and vegetable mixture.
- Cover the baking dish with aluminum foil and roast in the preheated oven for 20 minutes.
- Remove from the oven, sprinkle with fresh parsley, and serve warm.
