Ingredients

  • Bell peppers - 2 large (any color)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Zucchini - 1 medium, grated
  • Couscous - 100 grams (dry)
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, diced
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds. Set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic, grated carrot, and grated zucchini to the skillet. Cook for another 5 minutes until softened.
  5. Stir in the couscous, vegetable broth, cumin, cinnamon, paprika, salt, and black pepper. Mix well and cook for 2-3 minutes until the couscous absorbs the broth.
  6. Remove from heat and fold in the diced tomato and chopped parsley.
  7. Stuff the bell peppers with the couscous mixture, pressing down gently to pack them in.
  8. Place the stuffed peppers upright in a baking dish. Drizzle with a bit more olive oil and cover the dish with aluminum foil.
  9. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until the peppers are tender.
  10. Drizzle with lemon juice before serving and enjoy your Tajine de Piment!
