Tajine de Piment

Ingredients
- Bell peppers - 2 large (any color)
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Zucchini - 1 medium, grated
- Couscous - 100 grams (dry)
- Vegetable broth - 250 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Tomato - 1 medium, diced
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds. Set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, grated carrot, and grated zucchini to the skillet. Cook for another 5 minutes until softened.
- Stir in the couscous, vegetable broth, cumin, cinnamon, paprika, salt, and black pepper. Mix well and cook for 2-3 minutes until the couscous absorbs the broth.
- Remove from heat and fold in the diced tomato and chopped parsley.
- Stuff the bell peppers with the couscous mixture, pressing down gently to pack them in.
- Place the stuffed peppers upright in a baking dish. Drizzle with a bit more olive oil and cover the dish with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until the peppers are tender.
- Drizzle with lemon juice before serving and enjoy your Tajine de Piment!
