  • Carrot - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Chickpeas - 200 grams, cooked or canned, drained
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - a handful, chopped for garnish
  • Lemon - 1, cut into wedges for serving

Steps

  1. In a tajine or large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until softened and fragrant, about 5 minutes.
  3. Stir in the sliced carrot and chopped red bell pepper, cooking for another 5 minutes.
  4. Add the cubed sweet potatoes and cook for 5 minutes, stirring occasionally.
  5. Mix in the cooked chickpeas, cumin, cinnamon, coriander, salt, and black pepper.
  6. Pour in the vegetable broth and bring the mixture to a gentle simmer.
  7. Cover the tajine or pot and let it cook for about 25 minutes, or until the sweet potatoes are tender.
  8. Remove from heat, and garnish with chopped cilantro.
  9. Serve hot with lemon wedges on the side.
