- Carrot - 1 medium, sliced
- Red bell pepper - 1 medium, chopped
- Chickpeas - 200 grams, cooked or canned, drained
- Vegetable broth - 250 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - a handful, chopped for garnish
- Lemon - 1, cut into wedges for serving
Steps
- In a tajine or large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until softened and fragrant, about 5 minutes.
- Stir in the sliced carrot and chopped red bell pepper, cooking for another 5 minutes.
- Add the cubed sweet potatoes and cook for 5 minutes, stirring occasionally.
- Mix in the cooked chickpeas, cumin, cinnamon, coriander, salt, and black pepper.
- Pour in the vegetable broth and bring the mixture to a gentle simmer.
- Cover the tajine or pot and let it cook for about 25 minutes, or until the sweet potatoes are tender.
- Remove from heat, and garnish with chopped cilantro.
- Serve hot with lemon wedges on the side.
