Ingredients

  • Sweet potatoes - 400 grams
  • Chickpeas (canned) - 200 grams, drained and rinsed
  • Red onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, chopped
  • Tomato - 1 medium, diced
  • Vegetable broth - 250 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish
  • Lemon - 1, juiced

Steps

  1. Peel and chop the sweet potatoes into bite-sized cubes.
  2. In a large pan or tajine, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the sliced carrot and zucchini, cooking for about 5 minutes until they start to soften.
  5. Add the diced tomato, sweet potatoes, chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Mix well to combine all ingredients.
  6. Pour in the vegetable broth, bring to a simmer, then cover and reduce the heat to low. Let it cook for about 25 minutes or until the sweet potatoes are tender.
  7. Once cooked, remove from heat and stir in the lemon juice. Adjust seasoning if necessary.
  8. Garnish with fresh coriander before serving. Enjoy your tajine warm!
