- Sweet potatoes - 400 grams
- Chickpeas (canned) - 200 grams, drained and rinsed
- Red onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, chopped
- Tomato - 1 medium, diced
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
- Lemon - 1, juiced
Steps
- Peel and chop the sweet potatoes into bite-sized cubes.
- In a large pan or tajine, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the sliced carrot and zucchini, cooking for about 5 minutes until they start to soften.
- Add the diced tomato, sweet potatoes, chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Mix well to combine all ingredients.
- Pour in the vegetable broth, bring to a simmer, then cover and reduce the heat to low. Let it cook for about 25 minutes or until the sweet potatoes are tender.
- Once cooked, remove from heat and stir in the lemon juice. Adjust seasoning if necessary.
- Garnish with fresh coriander before serving. Enjoy your tajine warm!
