- Carrot - 1 medium, sliced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tsp, grated
- Cumin - 1 tsp
- Cinnamon - 1/2 tsp
- Turmeric - 1/2 tsp
- Olive oil - 2 tbsp
- Vegetable broth - 250 ml
- Chickpeas - 100 g, cooked
- Salt - to taste
- Black pepper - to taste
- Cilantro - 2 tbsp, chopped (for garnish)
Steps
- Heat the olive oil in a tajine or a deep skillet over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the diced red bell pepper and sliced carrot, cooking for an additional 5 minutes.
- Sprinkle in the cumin, cinnamon, turmeric, salt, and black pepper, stirring well to coat the vegetables.
- Pour in the vegetable broth and bring to a simmer.
- Add the cubed papaya and cooked chickpeas, mixing gently.
- Cover and let it cook on low heat for about 15 minutes, until the vegetables are tender and the flavors meld together.
- Remove from heat and garnish with chopped cilantro before serving.
