  • Vegetable broth - 250 ml
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat olive oil in a tajine or a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  3. Stir in the sliced carrot and zucchini, cooking for another 5 minutes until they begin to soften.
  4. Add the diced red bell pepper and cook for an additional 3 minutes.
  5. Sprinkle in the cinnamon, cumin, turmeric, salt, and black pepper, stirring well to coat the vegetables with the spices.
  6. Pour in the vegetable broth and bring the mixture to a simmer.
  7. Gently fold in the diced papaya and chickpeas, stirring carefully to combine.
  8. Cover the tajine or skillet and let it cook on low heat for about 10-15 minutes, allowing the flavors to meld and the papaya to soften.
