- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons (chopped)
- Vegetable broth - 200 ml
Steps
- Start by washing and cutting the pattypan squash, zucchini, and red bell pepper into bite-sized pieces.
- Finely chop the onion and garlic.
- In a tajine or a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic to the skillet, sautéing until soft and fragrant, about 5 minutes.
- Stir in the ground cumin, coriander, paprika, cinnamon, salt, and black pepper, cooking for another minute to release the spices' aromas.
- Add the pattypan squash, zucchini, and red bell pepper to the skillet, mixing well to coat the vegetables with the spices.
- Pour in the vegetable broth, cover, and reduce the heat to low. Let it simmer for about 25 minutes or until the vegetables are tender.
- Once cooked, remove from heat and stir in the chopped fresh cilantro.
- Serve hot, garnished with additional cilantro if desired.
