  • Pattypan squash - 300 grams
  • Zucchini - 150 grams
  • Red bell pepper - 100 grams
  • Onion - 1 medium (about 100 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Vegetable broth - 200 ml

Steps

  1. Start by washing and cutting the pattypan squash, zucchini, and red bell pepper into bite-sized pieces.
  2. Finely chop the onion and garlic.
  3. In a tajine or a large skillet, heat the olive oil over medium heat.
  4. Add the chopped onion and garlic to the skillet, sautéing until soft and fragrant, about 5 minutes.
  5. Stir in the ground cumin, coriander, paprika, cinnamon, salt, and black pepper, cooking for another minute to release the spices' aromas.
  6. Add the pattypan squash, zucchini, and red bell pepper to the skillet, mixing well to coat the vegetables with the spices.
  7. Pour in the vegetable broth, cover, and reduce the heat to low. Let it simmer for about 25 minutes or until the vegetables are tender.
  8. Once cooked, remove from heat and stir in the chopped fresh cilantro.
  9. Serve hot, garnished with additional cilantro if desired.
