Steps
- Cook the gluten-free pasta according to the package instructions, drain, and set aside.
- In a large skillet or tajine, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute, until fragrant.
- Add the diced red bell pepper, sliced carrot, and diced zucchini to the skillet, cooking for about 5-7 minutes until they begin to soften.
- Mix in the cooked chickpeas, tomato paste, ground cumin, ground coriander, paprika, salt, and black pepper.
- Pour in the vegetable broth and bring the mixture to a simmer, allowing it to cook for 10 minutes to blend the flavors.
- Add the cooked pasta to the skillet, stirring gently to combine and heat through.
- Remove from heat and stir in the chopped cilantro and lemon juice just before serving.
