  • Chickpeas - 150 grams, cooked
  • Tomato paste - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 500 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Cook the gluten-free pasta according to the package instructions, drain, and set aside.
  2. In a large skillet or tajine, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and cook for an additional minute, until fragrant.
  5. Add the diced red bell pepper, sliced carrot, and diced zucchini to the skillet, cooking for about 5-7 minutes until they begin to soften.
  6. Mix in the cooked chickpeas, tomato paste, ground cumin, ground coriander, paprika, salt, and black pepper.
  7. Pour in the vegetable broth and bring the mixture to a simmer, allowing it to cook for 10 minutes to blend the flavors.
  8. Add the cooked pasta to the skillet, stirring gently to combine and heat through.
  9. Remove from heat and stir in the chopped cilantro and lemon juice just before serving.
