Ingredients

  • Carrot - 100g
  • Zucchini - 100g
  • Potato - 100g
  • Onion - 50g
  • Garlic - 2 cloves
  • Cumin powder - 1 tsp
  • Coriander powder - 1 tsp
  • Paprika - 1/2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 2 tbsp
  • Fresh parsley - 2 tbsp, chopped
  • Puff pastry - 250g
  • Lemon juice - 1 tbsp
  • Sesame seeds - 1 tbsp (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and finely chop the carrot, zucchini, and potato into small cubes.
  3. Finely chop the onion and garlic.
  4. In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  5. Add the chopped carrots, zucchini, and potato to the skillet, and cook for about 10 minutes, stirring occasionally.
  6. Stir in the cumin, coriander, paprika, salt, and black pepper, and cook for another 5 minutes until the vegetables are tender.
  7. Remove from heat, add the fresh parsley and lemon juice, and mix well. Let the filling cool slightly.
  8. Roll out the puff pastry on a lightly floured surface and cut it into circles or squares, depending on your preference.
  9. Place a spoonful of the vegetable filling in the center of each pastry circle, fold over, and seal the edges by pressing down with a fork.
  10. Place the sealed pastries on a baking sheet lined with parchment paper, and brush the tops with a little olive oil.
  11. Sprinkle sesame seeds on top of the pastries.
  12. Bake in the preheated oven for 20-25 minutes or until golden brown.
  13. Serve hot and enjoy!
