- Carrot - 100g
- Zucchini - 100g
- Potato - 100g
- Onion - 50g
- Garlic - 2 cloves
- Cumin powder - 1 tsp
- Coriander powder - 1 tsp
- Paprika - 1/2 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 2 tbsp
- Fresh parsley - 2 tbsp, chopped
- Puff pastry - 250g
- Lemon juice - 1 tbsp
- Sesame seeds - 1 tbsp (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and finely chop the carrot, zucchini, and potato into small cubes.
- Finely chop the onion and garlic.
- In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the chopped carrots, zucchini, and potato to the skillet, and cook for about 10 minutes, stirring occasionally.
- Stir in the cumin, coriander, paprika, salt, and black pepper, and cook for another 5 minutes until the vegetables are tender.
- Remove from heat, add the fresh parsley and lemon juice, and mix well. Let the filling cool slightly.
- Roll out the puff pastry on a lightly floured surface and cut it into circles or squares, depending on your preference.
- Place a spoonful of the vegetable filling in the center of each pastry circle, fold over, and seal the edges by pressing down with a fork.
- Place the sealed pastries on a baking sheet lined with parchment paper, and brush the tops with a little olive oil.
- Sprinkle sesame seeds on top of the pastries.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Serve hot and enjoy!
