- cumin - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/2 teaspoon
- chicken broth - 200 milliliters
- honey - 1 tablespoon
- almonds - 30 grams, toasted
- fresh cilantro - for garnish
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Season the chicken thighs with salt, black pepper, cinnamon, ginger, and cumin, then add them to the pot, browning them on all sides.
- Pour in the chicken broth and honey, bring to a simmer, then reduce the heat to low and cover the pot.
- Let the chicken cook for about 20 minutes, stirring occasionally.
- After 20 minutes, add the sliced peaches to the pot, cover, and cook for an additional 10 minutes until the chicken is cooked through and the peaches are tender.
- Once done, sprinkle the toasted almonds on top, garnish with fresh cilantro, and serve warm.
