  • chicken thighs - 300 grams
  • fresh peaches - 2 medium, sliced
  • onion - 1 medium, chopped
  • garlic - 2 cloves, minced
  • olive oil - 2 tablespoons
  • cinnamon - 1 teaspoon
  • ground ginger - 1 teaspoon
  • cumin - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/2 teaspoon
  • chicken broth - 200 milliliters
  • honey - 1 tablespoon
  • almonds - 30 grams, toasted
  • fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Season the chicken thighs with salt, black pepper, cinnamon, ginger, and cumin, then add them to the pot, browning them on all sides.
  5. Pour in the chicken broth and honey, bring to a simmer, then reduce the heat to low and cover the pot.
  6. Let the chicken cook for about 20 minutes, stirring occasionally.
  7. After 20 minutes, add the sliced peaches to the pot, cover, and cook for an additional 10 minutes until the chicken is cooked through and the peaches are tender.
  8. Once done, sprinkle the toasted almonds on top, garnish with fresh cilantro, and serve warm.
