- White fish fillets (such as cod or haddock) - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh ginger - 1 teaspoon, grated
- Tomatoes - 2 medium, diced
- Chickpeas - 100 grams, cooked
- Dried apricots - 50 grams, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lemon - 1, juiced
- Water - 250 milliliters
Steps
- In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, ground cumin, ground coriander, paprika, salt, black pepper, and ground cinnamon. Cook for 2 minutes until fragrant.
- Add the diced tomatoes and cook for another 5 minutes until they begin to break down.
- Stir in the cooked chickpeas and chopped dried apricots, mixing well.
- Lay the fish fillets on top of the mixture and drizzle with lemon juice. Gently press the fish into the sauce.
- Pour in the water, cover the tajine, and let it simmer on low heat for about 15-20 minutes, or until the fish is cooked through and flakes easily.
- Garnish with chopped fresh cilantro before serving.
