Ingredients

  • 2 medium oranges, zest and juice
  • 1 cup cooked chickpeas
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium zucchini, diced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 1/4 cup vegetable broth
  • Fresh cilantro, for garnish

Steps

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  2. Add the diced carrot and zucchini to the pan. Stir and cook for about 5 minutes until they start to soften.
  3. Stir in the cooked chickpeas, ground cumin, ground cinnamon, ground turmeric, salt, and pepper. Cook for another 2-3 minutes to toast the spices.
  4. Add the orange zest, orange juice, and vegetable broth to the pan. Stir well to combine all the ingredients.
  5. Cover the pan and let it simmer on low heat for about 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
  6. Once cooked, remove from heat and let it sit for a couple of minutes. Serve warm, garnished with fresh cilantro.
