Ingredients
- 2 medium oranges, zest and juice
- 1 cup cooked chickpeas
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 medium zucchini, diced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
- 1/4 cup vegetable broth
- Fresh cilantro, for garnish
Steps
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the diced carrot and zucchini to the pan. Stir and cook for about 5 minutes until they start to soften.
- Stir in the cooked chickpeas, ground cumin, ground cinnamon, ground turmeric, salt, and pepper. Cook for another 2-3 minutes to toast the spices.
- Add the orange zest, orange juice, and vegetable broth to the pan. Stir well to combine all the ingredients.
- Cover the pan and let it simmer on low heat for about 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
- Once cooked, remove from heat and let it sit for a couple of minutes. Serve warm, garnished with fresh cilantro.
