  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a medium-sized pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced bell pepper, and carrot, cooking for an additional 5 minutes.
  4. Add the cumin, coriander, paprika, and cinnamon, and cook for 1 minute until fragrant.
  5. Pour in the vegetable broth and bring the mixture to a gentle simmer.
  6. Add the green and black olives, season with salt and black pepper, and let it cook for 15 minutes, stirring occasionally.
  7. Remove from heat and stir in the chopped parsley.
  8. Serve warm, ideally with crusty bread or over couscous.
