- Bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil in a medium-sized pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced bell pepper, and carrot, cooking for an additional 5 minutes.
- Add the cumin, coriander, paprika, and cinnamon, and cook for 1 minute until fragrant.
- Pour in the vegetable broth and bring the mixture to a gentle simmer.
- Add the green and black olives, season with salt and black pepper, and let it cook for 15 minutes, stirring occasionally.
- Remove from heat and stir in the chopped parsley.
- Serve warm, ideally with crusty bread or over couscous.
