  • Zucchini - 1 medium, diced
  • Bell pepper (red or yellow) - 1, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Curry powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a tajine or a large pot over medium heat and sauté the chopped onion, garlic, and grated ginger until fragrant, about 3-4 minutes.

  5. Season with salt and black pepper to taste, then reduce the heat to low, cover, and let it simmer for about 20 minutes, stirring occasionally.
