  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large tajine or pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
  2. Add the turnips, carrots, and zucchini to the pot, stirring to combine with the onion and garlic. Cook for another 5 minutes, allowing the vegetables to soften slightly.
  3. Stir in the chickpeas, ground cumin, ground coriander, cinnamon, paprika, salt, and black pepper. Mix well to ensure the spices coat the vegetables evenly.
