- Chickpeas - 200 grams, canned and rinsed
- Vegetable broth - 200 ml
- Almonds - 30 grams, chopped
- Fresh mint - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a tajine or a large skillet, heat the olive oil over medium heat.
- Add the chopped red onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, cinnamon, and cumin, cooking for an additional 2 minutes until fragrant.
- Add the canned chickpeas, vegetable broth, and blueberries to the skillet. Stir gently to combine.
- Cover the tajine or skillet and let it simmer for 15 minutes, allowing the flavors to meld.
- After 15 minutes, remove the lid and let it cook for another 5 minutes, allowing some of the liquid to reduce.
- Season with salt and black pepper to taste, then remove from heat.
- Garnish with chopped almonds and fresh mint before serving.
