- Lamb shoulder - 300 grams, cut into chunks
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 large, sliced
- Zucchini - 1 medium, chopped
- Tomato - 1 medium, chopped
- Chickpeas - 100 grams, canned and drained
- Cinnamon stick - 1
- Ginger powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh cilantro - a handful, chopped for garnish
Steps
- Heat the olive oil in a tajine or heavy-bottomed pot over medium heat.
- Add the chopped onions and minced garlic, sautéing until soft and translucent.
- Add the lamb chunks to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the sliced carrot, chopped zucchini, and chopped tomato, mixing well.
- Add the chickpeas, cinnamon stick, ginger powder, cumin, paprika, salt, and black pepper, stirring to combine.
- Pour in the water, bringing the mixture to a gentle simmer.
- Cover the pot with a lid and reduce the heat to low, allowing it to cook for about 60 minutes or until the lamb is tender.
- Once cooked, taste and adjust seasoning if needed. Remove the cinnamon stick before serving.
- Garnish with fresh cilantro and serve hot with couscous or bread.
