Ingredients

  • Lamb shoulder - 300 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 large, sliced
  • Zucchini - 1 medium, chopped
  • Tomato - 1 medium, chopped
  • Chickpeas - 100 grams, canned and drained
  • Cinnamon stick - 1
  • Ginger powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh cilantro - a handful, chopped for garnish

Steps

  1. Heat the olive oil in a tajine or heavy-bottomed pot over medium heat.
  2. Add the chopped onions and minced garlic, sautéing until soft and translucent.
  3. Add the lamb chunks to the pot, browning them on all sides for about 5-7 minutes.
  4. Stir in the sliced carrot, chopped zucchini, and chopped tomato, mixing well.
  5. Add the chickpeas, cinnamon stick, ginger powder, cumin, paprika, salt, and black pepper, stirring to combine.
  6. Pour in the water, bringing the mixture to a gentle simmer.
  7. Cover the pot with a lid and reduce the heat to low, allowing it to cook for about 60 minutes or until the lamb is tender.
  8. Once cooked, taste and adjust seasoning if needed. Remove the cinnamon stick before serving.
  9. Garnish with fresh cilantro and serve hot with couscous or bread.
