Steps
- Heat the olive oil in a medium tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in the sliced carrot and cook for about 5 minutes until slightly softened.
- Add the diced zucchini and chopped red bell pepper, cooking for another 5 minutes.

- Lower the heat and cover the tajine, allowing it to cook for about 10-15 minutes until the vegetables are tender.
- Stir in the mustard, mixing well to incorporate it into the vegetable mixture.
