  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Mustard (Dijon or whole grain) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a medium tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the sliced carrot and cook for about 5 minutes until slightly softened.
  4. Add the diced zucchini and chopped red bell pepper, cooking for another 5 minutes.
  5. Add the cooked chickpeas, ground cumin, ground coriander, turmeric, salt, and black pepper, stirring well to combine.
  6. Pour in the vegetable broth, bringing the mixture to a gentle simmer.
  7. Lower the heat and cover the tajine, allowing it to cook for about 10-15 minutes until the vegetables are tender.
  8. Stir in the mustard, mixing well to incorporate it into the vegetable mixture.
  9. Cook for an additional 2-3 minutes to heat through, then remove from heat.
  10. Serve hot, garnished with fresh cilantro.
