- Chickpeas - 200 grams, canned, drained and rinsed
- Red onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 200 ml
- Honey (or agave syrup for strict vegan) - 2 tablespoons
- Ground cinnamon - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground ginger - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - a handful, chopped for garnish
Steps
- In a large skillet or tajine pot, heat the olive oil over medium heat.
- Add the chopped red onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the sliced carrot, zucchini, and red bell pepper, cooking for another 5 minutes until they begin to soften.
- Add the chickpeas, vegetable broth, honey (or agave syrup), ground cinnamon, ground cumin, ground ginger, salt, and black pepper.
- Bring the mixture to a gentle simmer, cover, and let cook for about 15 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
- Remove from heat, garnish with chopped fresh cilantro, and serve warm.
