  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, diced
  • Chickpeas - 200 grams, canned, drained and rinsed
  • Red onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 ml
  • Honey (or agave syrup for strict vegan) - 2 tablespoons
  • Ground cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - a handful, chopped for garnish

Steps

  1. In a large skillet or tajine pot, heat the olive oil over medium heat.
  2. Add the chopped red onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the sliced carrot, zucchini, and red bell pepper, cooking for another 5 minutes until they begin to soften.
  4. Add the chickpeas, vegetable broth, honey (or agave syrup), ground cinnamon, ground cumin, ground ginger, salt, and black pepper.
  5. Bring the mixture to a gentle simmer, cover, and let cook for about 15 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
  6. Remove from heat, garnish with chopped fresh cilantro, and serve warm.
