- Canned diced tomatoes - 400 grams
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - a handful, chopped
- Water - 250 milliliters
Steps
- Heat olive oil in a tajine or a large skillet over medium heat.
- Add the merguez sausages and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the diced onion and garlic, sautéing for 2-3 minutes until softened.
- Add the chopped red bell pepper, diced carrot, and sliced zucchini, cooking for an additional 5-7 minutes until vegetables begin to soften.
- Stir in the cumin, coriander, paprika, salt, and black pepper, mixing well to coat the vegetables in the spices.
- Add the canned diced tomatoes and chickpeas, followed by the water. Stir well to combine.
- Return the browned merguez sausages to the skillet, nestling them into the mixture.
- Cover and let simmer for 25-30 minutes on low heat, allowing the flavors to meld.
- Once cooked, garnish with fresh cilantro before serving.
