Ingredients

  • Merguez sausages - 200 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, chopped
  • Zucchini - 1, sliced
  • Carrot - 1, diced
  • Onion - 1, diced
  • Garlic - 2 cloves, minced
  • Canned chickpeas - 200 grams, drained and rinsed
  • Canned diced tomatoes - 400 grams
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - a handful, chopped
  • Water - 250 milliliters

Steps

  1. Heat olive oil in a tajine or a large skillet over medium heat.
  2. Add the merguez sausages and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the diced onion and garlic, sautéing for 2-3 minutes until softened.
  4. Add the chopped red bell pepper, diced carrot, and sliced zucchini, cooking for an additional 5-7 minutes until vegetables begin to soften.
  5. Stir in the cumin, coriander, paprika, salt, and black pepper, mixing well to coat the vegetables in the spices.
  6. Add the canned diced tomatoes and chickpeas, followed by the water. Stir well to combine.
  7. Return the browned merguez sausages to the skillet, nestling them into the mixture.
  8. Cover and let simmer for 25-30 minutes on low heat, allowing the flavors to meld.
  9. Once cooked, garnish with fresh cilantro before serving.
