Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked
  • Tomatoes - 2 medium, diced
  • Vegetable broth - 250 ml
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Fresh mint leaves - 1/2 cup, chopped
  • Cilantro - 1/4 cup, chopped
  • Lemon - 1, juiced

Steps

  1. In a medium-sized pot or tajine, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the sliced carrot and cook for another 5 minutes, until slightly softened.
  4. Add the diced zucchini and bell pepper, cooking for an additional 5 minutes.
  5. Mix in the cooked chickpeas, diced tomatoes, vegetable broth, cinnamon, cumin, paprika, and salt.
  6. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 15 minutes.
  7. Stir in the chopped mint and cilantro just before serving, and drizzle with lemon juice.
  8. Serve hot, garnished with extra mint leaves if desired.
