- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Chickpeas - 200 grams, cooked
- Tomatoes - 2 medium, diced
- Vegetable broth - 250 ml
- Cinnamon - 1/2 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Fresh mint leaves - 1/2 cup, chopped
- Cilantro - 1/4 cup, chopped
- Lemon - 1, juiced
Steps
- In a medium-sized pot or tajine, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, sauté until the onion becomes translucent, about 5 minutes.
- Stir in the sliced carrot and cook for another 5 minutes, until slightly softened.
- Add the diced zucchini and bell pepper, cooking for an additional 5 minutes.
- Mix in the cooked chickpeas, diced tomatoes, vegetable broth, cinnamon, cumin, paprika, and salt.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 15 minutes.
- Stir in the chopped mint and cilantro just before serving, and drizzle with lemon juice.
- Serve hot, garnished with extra mint leaves if desired.
