  • Chickpeas - 200 grams, canned, drained and rinsed
  • Fresh mint - 1/4 cup, chopped
  • Coriander - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Almonds - 30 grams, slivered, for garnish

Steps

  1. In a tajine or a large skillet, heat the olive oil over medium heat.
  2. Add the sliced red onion and sauté for 5 minutes until soft.
  3. Stir in the minced garlic, cumin, cinnamon, paprika, salt, and black pepper, cooking for an additional 2 minutes until fragrant.
  4. Add the diced watermelon and chickpeas to the skillet, gently stirring to combine.
  5. Cover and let simmer for about 10-15 minutes until the watermelon starts to soften but retains some structure.
