- Chickpeas - 200 grams, canned, drained and rinsed
- Fresh mint - 1/4 cup, chopped
- Coriander - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Almonds - 30 grams, slivered, for garnish
Steps
- In a tajine or a large skillet, heat the olive oil over medium heat.
- Add the sliced red onion and sauté for 5 minutes until soft.
- Stir in the minced garlic, cumin, cinnamon, paprika, salt, and black pepper, cooking for an additional 2 minutes until fragrant.
- Add the diced watermelon and chickpeas to the skillet, gently stirring to combine.
