  • Ground ginger - 1/2 teaspoon
  • Chickpeas - 200 grams, cooked and drained
  • Vegetable broth - 250 milliliters
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Almonds - 30 grams, sliced

Steps

  1. Peel and dice the ripe mangoes into bite-sized pieces, then set aside.
  2. In a tajine or a deep skillet, heat the olive oil over medium heat.
  3. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic, ground cumin, ground cinnamon, and ground ginger, cooking for another 2 minutes until fragrant.
  5. Add the cooked chickpeas and diced mango to the pan, stirring gently to combine.
