- Almonds - 30 grams, toasted and roughly chopped
Steps
- Peel and dice the mangoes, setting them aside.
- In a tajine or a deep skillet, heat the olive oil over medium heat.
- Add the sliced red onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the ground cumin, cinnamon, ginger, salt, and black pepper, stirring well to combine.
- Add the cooked chickpeas and diced mango to the skillet, mixing gently.
- Pour in the vegetable broth and bring to a simmer, allowing it to cook for 10 minutes.
- Stir in the chopped cilantro and lemon juice just before serving.
- Serve warm, garnished with toasted almonds on top.
