  • Ripe mango - 2 medium

  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 1 cup, cooked
  • Vegetable broth - 200 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Almonds - 30 grams, toasted and roughly chopped

Steps

  1. Peel and dice the mangoes, setting them aside.
  2. In a tajine or a deep skillet, heat the olive oil over medium heat.
  3. Add the sliced red onion and cook until translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the ground cumin, cinnamon, ginger, salt, and black pepper, stirring well to combine.
  6. Add the cooked chickpeas and diced mango to the skillet, mixing gently.
  7. Pour in the vegetable broth and bring to a simmer, allowing it to cook for 10 minutes.
  8. Stir in the chopped cilantro and lemon juice just before serving.
  9. Serve warm, garnished with toasted almonds on top.
