Ingredients

  • Lychee - 200 grams (peeled and pitted)
  • Chickpeas - 150 grams (cooked or canned)
  • Red bell pepper - 1 medium (diced)
  • Carrot - 1 medium (sliced)
  • Zucchini - 1 medium (diced)
  • Onion - 1 medium (chopped)
  • Garlic - 2 cloves (minced)
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - a handful (chopped for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a tajine or large skillet over medium heat.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent, about 5 minutes.
  3. Stir in the diced red bell pepper, sliced carrot, and diced zucchini, cooking for another 5 minutes.
  4. Add the cooked chickpeas, lychee, cinnamon, cumin, turmeric, salt, and black pepper. Stir well to combine.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Cover the tajine or skillet, reduce the heat to low, and let it cook for 15 minutes, stirring occasionally.
  7. Once the vegetables are tender, remove from heat and stir in the lemon juice.
  8. Serve hot, garnished with chopped fresh cilantro.
