- Chickpeas - 150 grams (cooked or canned)
- Red bell pepper - 1 medium (diced)
- Carrot - 1 medium (sliced)
- Zucchini - 1 medium (diced)
- Onion - 1 medium (chopped)
- Garlic - 2 cloves (minced)
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - a handful (chopped for garnish)
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a tajine or large skillet over medium heat.
- Add the chopped onion and minced garlic; sauté until the onion is translucent, about 5 minutes.
- Stir in the diced red bell pepper, sliced carrot, and diced zucchini, cooking for another 5 minutes.
- Add the cooked chickpeas, lychee, cinnamon, cumin, turmeric, salt, and black pepper. Stir well to combine.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Cover the tajine or skillet, reduce the heat to low, and let it cook for 15 minutes, stirring occasionally.
- Once the vegetables are tender, remove from heat and stir in the lemon juice.
- Serve hot, garnished with chopped fresh cilantro.
