- Green lentils - 150 grams
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Rinse the green lentils under cold water and set aside.
- In a tajine or large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- Stir in the diced carrot and bell pepper, cooking for another 5 minutes until slightly softened.
- Add the chopped tomato, cumin, coriander, paprika, turmeric, salt, and black pepper, stirring well to combine.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Add the rinsed lentils to the pot, cover, and let it cook for about 25-30 minutes, or until the lentils are tender.
- Check occasionally and add more broth or water if necessary to prevent sticking.
- Once cooked, remove from heat and let it sit for a few minutes before serving.
- Garnish with fresh cilantro and serve warm.
