Ingredients

  • Green lentils - 150 grams
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a tajine or large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  4. Stir in the diced carrot and bell pepper, cooking for another 5 minutes until slightly softened.
  5. Add the chopped tomato, cumin, coriander, paprika, turmeric, salt, and black pepper, stirring well to combine.
  6. Pour in the vegetable broth and bring the mixture to a simmer.
  7. Add the rinsed lentils to the pot, cover, and let it cook for about 25-30 minutes, or until the lentils are tender.
  8. Check occasionally and add more broth or water if necessary to prevent sticking.
  9. Once cooked, remove from heat and let it sit for a few minutes before serving.
  10. Garnish with fresh cilantro and serve warm.
