- Black pepper - 1/2 teaspoon
- Chicken broth - 300 milliliters
- Dried apricots - 100 grams, chopped
- Almonds - 50 grams, blanched and toasted
- Fresh coriander - a handful, chopped (for garnish)
- Lemon - 1, cut into wedges (for serving)
Steps
- Heat olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the rabbit pieces to the pot, browning them on all sides for about 10 minutes.
- Sprinkle in the ground cumin, coriander, cinnamon, turmeric, salt, and black pepper, stirring well to coat the rabbit pieces with the spices.
- Pour in the chicken broth and bring to a gentle simmer.
- Add the dried apricots, cover the pot, and let it simmer for about 60 minutes, or until the rabbit is tender.
- Once the rabbit is cooked, remove the lid and let it simmer uncovered for another 10 minutes to reduce the sauce slightly.
- Stir in the toasted almonds just before serving.
- Serve hot, garnished with fresh coriander and lemon wedges on the side.
