Ingredients

  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1, chopped
  • Tomato - 1 medium, diced
  • Chicken broth - 250 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a tajine or large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until soft and translucent.
  3. Season the rabbit leg with salt and pepper, then add it to the skillet, browning it on all sides.
  4. Stir in the ground cumin, ground coriander, and paprika, cooking for an additional minute until fragrant.
  5. Add the carrot, zucchini, bell pepper, and diced tomato to the skillet, mixing well.
  6. Pour in the chicken broth and bring to a simmer.
  7. Cover and reduce the heat to low, cooking for 45 minutes or until the rabbit is tender.
  8. Stir in the chopped cilantro and lemon juice just before serving.
