Ingredients

  • Langoustines - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Tomatoes - 2 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced
  • Water - 300 ml

Steps

  1. Heat olive oil in a tajine or a deep skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the sliced carrot, zucchini, and diced bell pepper, cooking for about 5 minutes until they start to soften.
  5. Mix in the diced tomatoes, cumin, paprika, turmeric, salt, and black pepper, stirring well.
  6. Pour in the water and bring to a simmer.
  7. Add the langoustines to the pot, cover, and cook for 10-12 minutes until they turn pink and are cooked through.
  8. Remove from heat, stir in the chopped cilantro and lemon juice.
  9. Serve warm with crusty bread or over couscous.
