Ingredients

  • Lettuce - 200 grams
  • Zucchini - 150 grams
  • Red bell pepper - 100 grams
  • Cherry tomatoes - 100 grams
  • Chickpeas (cooked) - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Wash and chop the lettuce into large pieces, and set aside.
  2. Slice the zucchini and red bell pepper into thin strips.
  3. In a tajine or a deep skillet, heat the olive oil over medium heat.
  4. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the zucchini and red bell pepper, and cook for about 5 minutes until slightly softened.
  6. Stir in the cherry tomatoes and cooked chickpeas, cooking for an additional 3 minutes.
  7. Sprinkle in the cumin, paprika, salt, and black pepper, mixing well.
  8. Pour in the vegetable broth and bring to a simmer.
  9. Add the chopped lettuce and cover the tajine, allowing it to steam for 5 minutes until the lettuce is wilted.
  10. Remove from heat, drizzle with lemon juice, and garnish with fresh parsley before serving.
