- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Wash and chop the lettuce into large pieces, and set aside.
- Slice the zucchini and red bell pepper into thin strips.
- In a tajine or a deep skillet, heat the olive oil over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add the zucchini and red bell pepper, and cook for about 5 minutes until slightly softened.
- Stir in the cherry tomatoes and cooked chickpeas, cooking for an additional 3 minutes.
- Sprinkle in the cumin, paprika, salt, and black pepper, mixing well.
- Pour in the vegetable broth and bring to a simmer.
- Add the chopped lettuce and cover the tajine, allowing it to steam for 5 minutes until the lettuce is wilted.
- Remove from heat, drizzle with lemon juice, and garnish with fresh parsley before serving.
