Ingredients

  • Chickpeas - 100 grams (dried)
  • Black olives - 50 grams (pitted and sliced)
  • Carrot - 1 medium (sliced)
  • Zucchini - 1 medium (sliced)
  • Bell pepper - 1 medium (chopped)
  • Onion - 1 medium (chopped)
  • Garlic - 2 cloves (minced)
  • Tomato - 1 medium (diced)
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Soak the chickpeas in water for at least 8 hours or overnight, then drain and rinse.
  2. In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 5 minutes.
  4. Add the sliced carrots, zucchini, and chopped bell pepper, cooking for another 5 minutes.
  5. Stir in the diced tomato, cumin, coriander, cinnamon, salt, and black pepper, combining well.
  6. Add the soaked chickpeas and vegetable broth, bringing the mixture to a simmer.
  7. Cover the tajine or pot, reduce the heat to low, and let it cook for 30 minutes, stirring occasionally.
  8. Once the chickpeas are tender and the vegetables are cooked through, stir in the sliced black olives.
  9. Adjust seasoning if necessary, then remove from heat and let sit for 5 minutes.
  10. Garnish with fresh cilantro before serving.
