- Black olives - 50 grams (pitted and sliced)
- Carrot - 1 medium (sliced)
- Zucchini - 1 medium (sliced)
- Bell pepper - 1 medium (chopped)
- Onion - 1 medium (chopped)
- Garlic - 2 cloves (minced)
- Tomato - 1 medium (diced)
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Soak the chickpeas in water for at least 8 hours or overnight, then drain and rinse.
- In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and translucent, about 5 minutes.
- Add the sliced carrots, zucchini, and chopped bell pepper, cooking for another 5 minutes.
- Stir in the diced tomato, cumin, coriander, cinnamon, salt, and black pepper, combining well.
- Add the soaked chickpeas and vegetable broth, bringing the mixture to a simmer.
- Cover the tajine or pot, reduce the heat to low, and let it cook for 30 minutes, stirring occasionally.
- Once the chickpeas are tender and the vegetables are cooked through, stir in the sliced black olives.
- Adjust seasoning if necessary, then remove from heat and let sit for 5 minutes.
- Garnish with fresh cilantro before serving.
