- Eggplant - 1 small, diced
- Red onion - 1 medium, quartered
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 3 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Vegetable broth - 200 ml
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a large bowl, combine zucchini, red bell pepper, yellow bell pepper, eggplant, red onion, garlic, cumin, coriander, paprika, olive oil, salt, and black pepper. Toss well to coat the vegetables.
- Place the vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they are tender and slightly charred.
- In a tajine or a deep pot, layer the grilled vegetables and pour in the vegetable broth. Squeeze the lemon juice over the top and sprinkle with fresh parsley.
- Cover and simmer on low heat for 15-20 minutes to allow the flavors to meld.
- Serve warm, garnished with additional parsley and a wedge of lemon on the side.
