  • Zucchini - 1 medium, sliced

  • Eggplant - 1 small, diced
  • Red onion - 1 medium, quartered
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Vegetable broth - 200 ml

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a large bowl, combine zucchini, red bell pepper, yellow bell pepper, eggplant, red onion, garlic, cumin, coriander, paprika, olive oil, salt, and black pepper. Toss well to coat the vegetables.
  3. Place the vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they are tender and slightly charred.
  4. In a tajine or a deep pot, layer the grilled vegetables and pour in the vegetable broth. Squeeze the lemon juice over the top and sprinkle with fresh parsley.
  5. Cover and simmer on low heat for 15-20 minutes to allow the flavors to meld.
  6. Serve warm, garnished with additional parsley and a wedge of lemon on the side.
