  • Canned chickpeas - 240 grams, drained and rinsed
  • Tomato - 1 medium, chopped
  • Vegetable broth - 250 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - a handful, chopped (for garnish)

Steps

  1. In a large tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the diced zucchini, sliced carrot, and chopped bell pepper, cooking for another 5 minutes until they start to soften.
  4. Add the chopped tomato, chickpeas, vegetable broth, ground cumin, ground coriander, ground cinnamon, turmeric, salt, and black pepper.
  5. Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and cook for about 25 minutes until the vegetables are tender.
