- Canned chickpeas - 240 grams, drained and rinsed
- Tomato - 1 medium, chopped
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - a handful, chopped (for garnish)
Steps
- In a large tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the diced zucchini, sliced carrot, and chopped bell pepper, cooking for another 5 minutes until they start to soften.
- Add the chopped tomato, chickpeas, vegetable broth, ground cumin, ground coriander, ground cinnamon, turmeric, salt, and black pepper.
- Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and cook for about 25 minutes until the vegetables are tender.
