- Zucchini - 1 medium, sliced
- Bell Pepper - 1 medium, diced
- Red Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Chickpeas - 200 grams, canned, drained and rinsed
- Honey - 2 tablespoons
- Olive Oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Parsley - 2 tablespoons, chopped
- Vegetable Broth - 150 ml
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the sliced carrot, zucchini, bell pepper, red onion, and minced garlic.
- Add the drained chickpeas, honey, olive oil, cumin, cinnamon, paprika, salt, and black pepper to the bowl.
- Toss the ingredients together until everything is evenly coated with the spices and honey.
- Transfer the mixture to a baking dish and pour the vegetable broth over the top.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven and garnish with fresh parsley before serving.
