  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell Pepper - 1 medium, diced
  • Red Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Chickpeas - 200 grams, canned, drained and rinsed
  • Honey - 2 tablespoons
  • Olive Oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Fresh Parsley - 2 tablespoons, chopped
  • Vegetable Broth - 150 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the sliced carrot, zucchini, bell pepper, red onion, and minced garlic.
  3. Add the drained chickpeas, honey, olive oil, cumin, cinnamon, paprika, salt, and black pepper to the bowl.
  4. Toss the ingredients together until everything is evenly coated with the spices and honey.
  5. Transfer the mixture to a baking dish and pour the vegetable broth over the top.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
  8. Remove from the oven and garnish with fresh parsley before serving.
