- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Bell pepper (any color) - 1 medium, diced
- Tomato - 1 large, chopped
- Chickpeas (canned) - 200 grams, drained and rinsed
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat olive oil in a medium-sized pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced carrot, zucchini, and diced bell pepper to the pot, cooking for about 5 minutes until they begin to soften.
- Incorporate the chopped tomato, drained chickpeas, cumin powder, coriander powder, paprika, salt, and black pepper. Mix well.
- Cover the pot and let the mixture simmer for about 15 minutes, stirring occasionally, until the vegetables are tender.
- Remove from heat and stir in the fresh parsley and lemon juice.
- Serve warm as a snack or side dish.
