Ingredients

  • Kiwi - 3 medium, peeled and sliced
  • Chickpeas - 200 grams, cooked
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Red onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 200 ml

Steps

  1. In a large pan, heat the olive oil over medium heat and sauté the chopped red onion and minced garlic until softened, about 3-4 minutes.
  2. Add the diced red bell pepper and carrot to the pan, cooking for another 5 minutes until they are tender.
  3. Stir in the cooked chickpeas, ground cumin, ground cinnamon, paprika, salt, and black pepper. Cook for an additional 2 minutes to combine the flavors.
  4. Pour in the vegetable broth and bring to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld together.
  5. Add the sliced kiwi and lemon juice, gently folding them into the mixture. Cook for another 2-3 minutes until the kiwi is warmed through but still holds its shape.
  6. Remove from heat and sprinkle with freshly chopped cilantro before serving.
