Ingredients

  • Ground beef or lamb - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Canned crushed tomatoes - 400 grams
  • Olive oil - 1 tablespoon
  • Water - 100 milliliters
  • Egg - 1, beaten
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced

Steps

  1. In a bowl, combine the ground meat, half of the chopped onion, minced garlic, parsley, cilantro, cumin, paprika, cinnamon, salt, and black pepper. Mix well and form into small meatballs, about 2.5 cm in diameter.
  2. In a tajine or a large skillet, heat the olive oil over medium heat. Add the remaining chopped onion and sauté until translucent, about 5 minutes.
  3. Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5 minutes until slightly softened.
  4. Pour in the crushed tomatoes and water, stirring to combine. Bring the mixture to a simmer.
  5. Gently add the meatballs to the sauce, ensuring they are submerged. Cover and cook for 20 minutes on low heat, allowing the flavors to meld.
  6. Uncover, drizzle the beaten egg over the meatballs, and gently stir to incorporate. Cook for an additional 5 minutes until the egg is set.
  7. Serve hot, garnished with extra chopped parsley or cilantro if desired.
