  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon

  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pan over medium heat.

  3. Stir in the sliced carrot and diced zucchini, cooking for an additional 5 minutes.
  4. Add the cooked chickpeas, red currants, cinnamon, cumin, coriander, salt, and black pepper, stirring to combine all ingredients.
  5. Pour in the vegetable broth and bring to a simmer, covering the tajine or pan and reducing the heat to low.
